Marinated in a Refreshing Italian Orange Honey Dressing
This recipe was composed by my fellow Goddess on the Go, Vicki Hertel. Busy mother of four and teacher, Vicki still manages time for everyone in need. Even though her days were always filled, Vicki still found time to entertain for family holidays.
A persons’ heart can always seem to manufacture more love and care, you just cannot manufacture more time. Pressed for a solution, Vicki came up with a moist and delicious, chilled chicken salad dish perfect Easter brunch. She created a delicious chicken salad, marinated in an Italian orange honey dressing. It quickly became a much-loved tradition to her Easter brunch - her family fondly named it Chicky Vicki.

Chicky Vicky Ingredients
1 Large Oven Stuffer Rotisserie Chicken (I used an 8-pound chicken) cut into bite size pieces
3 Stalks of Celery finely chopped
¼ cup Red Onion finely chopped
2 Scallions green tops only finely chopped
1 pint Cherry Tomatoes halved
2 bottles Good Seasons Italian Salad Dressing
2 Navel Orange freshly grated no pith and juiced
¼ cup Honey
Additions
Fresh Parsley chopped slightly
Boston or Bib Lettuce or Your Choice of Prepared Salad Greens
Chicky Vicky Instructions
Prepare the following the day before serving.
Cut up fresh rotisserie chicken and add celery, red onion, scallions and cherry tomatoes.
Pour 2 bottles of salad dressing into a large measuring cup or bowl.
Add orange rind, orange juice and honey and whisk well.
Pour salad dressing over chicken in desired quantity. Note if you make a smaller chicken or want a milder taste, use less dressing. However, reserve the rest of the dressing to freshen chicken since a lot of the dressing will be absorbed.
Serve over a bed of greens in a large bowl or us individual salad bowl for effect. Top with fresh chopped parsley.
