Gluten Free Chocolate Brownies

With Marshmallow Fluff Buttercream

Lavished with Chocolate Glaze

 Not having known anyone with Celiac disease, I never felt the need to explore gluten free baking.  Recently, I learned that a child in our family was diagnosed with Celiac and needed a gluten free diet.  The realization struck me that he and other children must often have to be denied cupcakes, cakes and brownies at parties while they watch other kids enjoy these desserts.  This led me to the realization that more delicious gluten free recipes need to be developed.  It is important that we all conscientiously and respectfully provide fun and delicious foods for those who have Celiac Disease.

This little boy has a wonderful Mom, Dad and family who make it their purpose to cook delicious gluten free meals and desserts.  The Chocolate Goddess wants to make sure all parents have access to yummy and fun sweets for gluten free children and adults.  No child should experience having to pass on a confection at a birthday or holiday or any day.  If any child suffering from Celiac Disease will be at your party, you should provide or afford the opportunity for their parents to arrange for some gluten free snacks and desserts.  If it is your own child, make sure you make enough of your gluten free dessert for them to share. 

The Chocolate Goddess Gluten Free Brownie is one of the most scrumptious brownies ever. You don’t have to be on gluten free diet to bake it or to marvel in its deliciousness.  Gluten free; but deviously delicious, it is difficult to discern that there is no wheat flour. This brownie is cloaked in a chocolatey and fudgy taste and texture, veiled with a delicious marshmallow buttercream and topped off with a thick chocolate glaze.  Finish it with a dollop of the marshmallow buttercream and everyone at the party will want one, so be sure to bring the entire tray.

Brownie Ingredients

¾ cup Unsweetened Cocoa Powder

2 cups Pillsbury Best Gluten Free Mix

1 teaspoon Salt

1 cup (2 sticks) Butter

3 cups Granulated Sugar

6 Large Eggs (lightly whisked)

1 tablespoon McCormick’s Pure Vanilla Extract

Marshmallow Buttercream Ingredients

2 cups (4 sticks) Butter

1 Large 16 ounce container Marshmallow Fluff

2 teaspoons McCormick’s Pure Vanilla Extract

1 box (4 cups) Powdered Sugar

Chocolate Glaze Ingredients

1 ½ cups Semisweet Chocolate Chips

6 tablespoons of Butter

2 tablespoons Corn Syrup

Baking Instructions

Preheat oven to 350 degrees.

Prepare a 9 x 13 brownie pan by spraying with Butter flavored PAM.

Cut a sheet parchment paper an inch bigger than the pan on all four side. 

Cut diagonal slits in each corner.

Place in sprayed pan with slits fitted in corners.

Butter parchment.

Measure out all ingredients.

Melt butter and sugar on very low setting in microwave stirring until sugar is dissolved.

Add cocoa powder, stir until dissolved.

Add eggs and vanilla and incorporate well by hand.

Add gluten free flour and mix until well combined.

Spread evenly in brownie pan.

Bake at 350 degrees for 30 minutes. 

Test with a toothpick - bits of brownie should adhere to the tester.

Cool completely.

Place cutting board next to brownie pan.

Lift Brownies by holding ends of parchment and transferring onto a cutting board.

Carefully peel off parchment.

Frosting Instructions

Beat room temperature butter until smooth and creamy.

Beat in Marshmallow Fluff and vanilla.

Frost brownies, smoothing as best you can. 

Reserve a bit of frosting for dollops to top chocolate glaze.

Cut brownies.

Chocolate Glaze Instructions

Melt chocolate chips, butter and corn syrup on low (power level 3) stirring at 30 second intervals.  Be patient and don’t melt on high or the chocolate will seize.

Wait until glaze has cooled a bit and pour over brownies.

Top with a dollop of marshmallow fluff buttercream.
