Chocolate Comfort Cake With Fudge Frosting
The Chocolate Goddess wishes to express her concern for all those effected by hurricanes Harvey and Irma. She hopes you and yours are safe from the storm and have shelter, food and water. We must also send thanks and love to all of the wonderful relief workers for their strength and bravery.
If you were here, I would make you a chocolate cake, which I find is always a great comfort in time of need. Even if the people around you are safe from the hurricanes, I am sure each of you has a friend who is experiencing a sadness, an ailment or a worry. Make them a chocolate cake and don’t forget the chocolate sprinkles. Sprinkles have a marvelous fun and cheerful effect on people. Chocolate will soothe the soul and calm the nerves. Chocolate makes one feel loved, and the fact that someone has made them a cake, when it is not even their birthday, will bring great joy and let that person know that someone cares about them.

Chocolate Comfort Cake Ingredients
1 cup Nestles Unsweetened Cocoa Powder
1 cup Boiling Water
2 ¼ cups Cake Flour
1 ½ teaspoons Baking Soda
1 ½ cups Baking Powder
½ teaspoon Salt
12 tablespoons Butter at room temperature
2 ¼ cups Light Brown Sugar
1 cup of Sour Cream
2 Large Eggs
1 teaspoon of Pure Vanilla Extract
Fudge Frosting Ingredients
12 ounces Semisweet Chocolate
1 pound (4 sticks) Butter
2 teaspoons McCormick’s Pure Vanilla Extract
1 - 1 pound box Powdered Sugar
Large Container of Chocolate Sprinkles for Decorating
Serves 10
Baking Instructions
Preheat oven to 350 degrees.
Butter 2 eight inch cake pans. Dust with cocoa powder.
Boil water and dissolve cocoa. Set aside.
Combine flour, baking soda, baking powder and salt. Set aside.
Cream butter.
Add sour cream, brown sugar, eggs and pure vanilla extract, combine well.
Add cocoa mixture.
Add dry ingredients slowly.
Divide evenly into prepared cake pans.
Bake 28-35 minutes until toothpick inserted in center comes out clean.
Remove cake from oven and cool on wire rack for 15 minutes.
Remove cake from pan and cool completely on wire rack.
Chocolate Fudge Frosting Instructions
Melt chocolate and butter in microwave on low power stirring every 30 seconds.
Add vanilla and cool for over an hour to room temperature.
Stir every 15 minutes until you see it begin to thicken.
Beat in powdered sugar until thick and fudge-like.
Frost cake between layers and on top. Smooth sides.
Press on chocolate sprinkles.
