Snowball Cookies

 

I am not sure why people seem to forget about snowball cookies after Christmas. Snowballs are a melt in your mouth cookie that are creamier in mouthfeel and taste than a butter cookie. Besides the idea of snow takes us at least into March in New England and this adorable little dumpling of the cookie world with a cup of hot chocolate is the perfect treat on a snowy winter’s day.

 

 

Right now, I am obsessed with this cookie, which is so simple and quick to make, perfect for The Goddess on the Go that you are. Today it was pure buttery snowballs I was craving but I am feeling another derivation coming on in the near future.

 

Other recipes may add zests and other extracts, but at the moment I really craved the pure, decadent, melt-in-your-mouth type of unadulterated taste of butter, sugar and vanilla.  Sometimes a cookie does not have to be accessorized with a lot of add-ins to be beautiful and delicious.

 

I even posed mine in the snow for full effect!

Snowball Cookies Ingredients

½ pound Lightly Salted Butter at room temperature

2 teaspoons Pure Vanilla Extract

½ cup Powdered Sugar for recipe, plus 1 cup for rolling cookies

2 cups All Purpose Flour

¾ cup Walnuts chopped very finely (It looks more like a snowball this way)

 

Snowball Cookies Instructions

Preheat oven to 400 degrees.

Line a large cookie sheet with parchment.

Beat butter until creamy.

Add vanilla and powdered sugar and beat until well incorporated. 

Add flour in two batches on low setting.

Fold in nuts on low setting.

Form 1-inch balls and place on prepared pan.

Bake about 10 or so just until edges are very lightly golden.  Check after 8 minutes if your oven is fast and watch carefully since it is the difference between a creamy and crunchy cookie.

Cool slightly but roll in powdered sugar while they are still warm.

Cool another 10 minutes and roll in powdered sugar again.
