The ladies were coming for lunch today and I don’t have much time to prepare. In cases like this I channel The Goddess on the Go who inspired me with a quick and easy and elegant meal with a spectacular presentation.
A side of vegetable chips and a crisp white wine topped off the main course. The Bird in Hand is great for a luncheon when you want to impress but time is short!

Chicken Salad on Cinnamon Raisin Bread with Raspberry Mayonnaise
Chicken breasts steamed in apple juice give this salad a mouthwatering taste. Add cranberries, apples, walnuts, and serve on cinnamon raisin bread for the perfect mélange of flavors.
4 Boneless Chicken Breasts
4 tablespoons Butter
4 ounces Apple Juice
Salt and Pepper to taste
2 large or 3 small Granny Smith Apples chopped
½ cup Dried Ocean Spray Craisins
1/3 cup Chopped Walnuts
½ cup Hellmann’s Mayonnaise
Cinnamon Raisin Bread (Round Greenway is visually more elegant)
2 tablespoons good quality Raspberry Preserves
¼ cup Mayonnaise
Melt butter in frying pan: add apple juice and a few dashes of salt and pepper. Steam chicken over low heat for approximately 25 minutes, turning once halfway through. Check that chicken is no longer pink inside. Cool chicken thoroughly in fridge for a few hours.
Dice chicken. Add chopped apple, craisins, walnuts, and mayo.
Mix remaining mayonnaise and raspberry preserves. Glaze cinnamon raisin bread of your choice.
Spoon the salad onto bread and garnish with raspberries and mandarin oranges!
